Hearty Chicken Chowder Soup

Ingredients:
Small tub Panera Broccoli Cheese Soup
One tub of shredded rotisserie chicken (4 hours) or two chicken breasts (cook up to 8 hours)
One can of white beans
One can of green chili enchilada sauce
One chopped sweet pepper, optional
One cup of grated sharp cheddar cheese
1/2 cup of shredded carrots or whole carrot
Optional ingredients: 2 tbsp of cream of cheese, chopped green chilis, peas, whole corn, Rotel to taste. Sometimes I add corn instead of white beans.
Combine all ingredients in a slow cooker and cook on low for up to 8 hours. Add cheese at the end if desired. It's even better the following day. Cooking time is extended with chicken breasts. If using shredded chicken, it can be ready in 2 hours on high heat in the slow cooker.

Pairs wonderfully with warm cornbread or chips. This dish is a staple in our weekly menu. It yields enough for an additional meal the following night or can be frozen for later.
